Our New Favorite Banana Bread

Banana bread is one of our household staples.  It’s a treat the kids love for breakfast or an after school snack, & my husband tops it with vanilla ice cream for dessert.  I’ve never had a particular recipe I’ve used, but have been wanting to come across the secret to a more tea cake consistency and here it is.



  • 6oz softened butter
  • 3oz caster sugar
  • 3 eggs
  • 1 teas baking powder
  • pinch of salt
  • 6 oz flour
  • 2 tablespoons milk
  • squeeze of lemon
  • 1 teas vanilla
  • 3 ripe bananas


  • mix sugar and butter.  Add eggs, fold in flour, salt, baking powder.  Stir in bananas, milk, vanilla, lemon.
  • Bake in a loaf pan 326 for 1 good hour
